If you’ve spent any time bouncing around Boulder in the last six years or so, then there’s an excellent chance you’ve had a McDevitt taco. From the summer Pearl Street cart to popping up at music festivals and breweries, McDevitt Taco Supply has become a go-to food option for people involved in Boulder’s massive event scene.
In 2017, at long last for the real taco aficionados around, McDevitt opened its first permanent restaurant space in The Meadows shopping center at Baseline Road and Foothills Parkway.
Bradford McDevitt, along with his brother Clay, says he started with one cart “just for something to do.” Popping up on Pearl Street for the summer, they never imagined they’d have employees, much less an excitedly anticipated restaurant. Quickly, however, their signature electric green sign and self-proclaimed “super heady tacos” became a local hit.
Food trucks in Boulder are a fixture. Breweries and taprooms love them for providing a rotating food option, and the outdoor music scene in Colorado has to fuel its all-day dance parties somehow. In 2014, there was even a Kickstarter that resulted in The Rayback Collective, a beer lover’s hotspot with outdoor space specifically dedicated to an ever-growing stable of food trucks, changing over every day. So for a homegrown operation like McDevitt, the town was primed to latch on to a new endeavor.
These days, business is booming. McDevitt has become a much-loved feature of Sanitas Brewing and is booked more or less solid for Colorado-style weddings throughout the year. Seasoned taco experts look to the traditionals for al pastor, green chilies and chicken, and the standard ground beef, while true Boulderites dig into the Thunder or Lightning tacos, topped with a full scoop of kale salad. It’s recipes like these that push McDevitt into that rarified territory of the distinctly local.
After more than six years and a third cart, the McDevitts know better than to mess with a good formula. The restaurant features all the old favorites, with the addition of beers on tap and a truly eye-catching margarita. (You’ll see what that means.) Surrounded by gorgeous reclaimed-wood paneling, custom-made light fixtures and hanging plant boxes, the restaurant has a feeling all of its own. For friends, family and regulars, there’s a fun bonus, as well: The back hallway has a full-wall, black-and-white photo mural featuring McDevitt alumni and friends in costume, shot by local photographer Joe Friend.
It’s easy to see what made these guys neighborhood favorites. From the tasty food to the style of the place to the occasionally cape-wearing proprietor (seriously, you can’t miss Bradford’s taco cape at a festival) and a devotion to the Boulder scene, these guys fit right in.

The McDevitt Taco Supply restaurant is located in The Meadows on the Parkway Shopping Center, 4800 Baseline Road, Boulder. The restaurant has seating for 45 diners inside and 22 on the patio and is open for lunch and dinner seven days a week, with late-night hours on Fridays and Saturdays.
